【摘要】:1.1ThisInternationalStandarddescribesthedeterminationofthea-amylaseactivityofcerealsbytheFallingNumbermethodaccordingtoHagberg-Perten.Thismethodisapplicabletocerealgrains,inparticulartowheatandryeandtheirrespectiveflours,durumwheatanditssemolina.ForthepurposesofthisInternationalStandardtheterm"flour"includessemolinaandgroundgrain(wholemeal),theparticlesizesofwhicharedefined.Thismethodisnotapplicableforthedeterminationoflowlevelsofa-amylaseactivity,whichcanbecarriedoutinaccordancewithISO7973.1.2ByconvertingtheFallingNumberintoaLiquefactionNumber(LN),itispossibletousethismethodtoestimatethecompositionofmixturesofgrain,flourorsemolinawithknownFallingNumbervaluesnecessarytoproduceasampleofarequiredFallingNumber.
